It is coming to that time where I need to start thinking ahead. Into my future. A time to think of what is important when I find that right man and one day become his Mrs. and his chef.
My mom has told me again and again, “You must ask for a crockpot and rice cooker as a wedding gift! It is a lifesaver.” Over the last couple of years, I learned that it is the truth. I find it fascinating to watch my mom put a few ingredients in the crockpot, and less than five minutes dinner is on its way to cooking. Five minutes of time and several hours later, we can enjoy a delicious, warm meal!
If you own a crockpot and rice cooker, you know what I mean. It is amazing!
Our favorite recipes are Taco Soup and Italian Rice. Yes, Italian rice. My mom named it. It is SOOO good. Oh, so is her beef roast!
When that time does come in my life of being a wife and sole cook, I do want something to “make it easy.” I can imagine cooking all the time when I’m newly married, but I also know that’ll end, especially if I’m making all those big, heavy meals that newly married couples usually have together. It’ll be so amazing to be able to take just a few minutes in the morning and do some other things during the day and have dinner ready when he comes in the door! Or having our meal in the crockpot/rice cooker while we are out for the day, enjoying each others company.
Later in life, I hope to be a mother, and when that comes, my time in the kitchen will be a little harder to get and the hungry stomachs of my husband and children will not stay full, so it’ll be amazing to have something that I can quickly whip together so I can provide my family with a healthy and delicious meal.
2 lbs. Shredded Chicken
1 Can Black Beans
1 Can of Corn
2 Cans of Diced Tomatoes
1 Can of Tomato Sauce
1 Box of Chicken Broth
1/2 cup of taco seasoning
Add liquid first and mix in the seasoning, then the solid foods. (We have used raw chicken when using the crockpot). Stir it together and cook. Serve warm, with Mexican cheese and sour cream! Chips at the side are awesome, too.
