It is getting closer to the time when we will be making some of the most delicious desserts. Pies. Cookies. Fudge. Buckeye Bark. YUM!
I made my first buckeye balls a few years ago. It was scrumptious. Not only that, but it was gone in just a few days. My family loved them, especially my dad. When I see my dad so excited for a certain food I make, it gets me all happy inside. It makes me feel good about my cooking skill and look forward to the day when I can make my husband happy about the food I make him.
I made buckeye balls a couple times, and although it was easy, it was still a little difficult because you had to dip each individual peanut butter ball into the chocolate on the stove and make sure the chocolate doesn’t harden, so when I saw a recipe to make buckeye bark, I gave it a try. It was much easier.
Being a Reese’s Cup kind of girl, making something quite similar is like the best thing ever! Okay, now that I have caused you to salivate, I guess I’ll give you the recipe…
2 1/2 cups Chocolate Chips
1 3/4 cups Creamy Peanut Butter
2 cups Confectioner’s sugar
8 TBSP butter, melted
1 tsp Vanilla
Melt half of the chocolate chips, on medium-high heat. Once melted, spread the chocolate over parchment covered cookie sheet, about 1/8 or 1/4 inch thick. Put in freezer till firm. Mix the PB, sugar, butter and vanilla until smooth and creamy. Spread over top of frozen chocolate. Place back into freezer. Melt remaining chocolate and pour on top. Put back in freezer. Once it is firm, break the dessert into bark pieces. Store in refrigerator or freezer until ready to serve.
Easy, right? I think it is much easier than forming the balls individually, than covering them with the chocolate before the chocolate hardens back up. While one step is being done, you can work on the next step. Like I said…easy.
